Do you remember Dongding Oolong, once a sensation in the world of tea? Often associated with "North Wenshan, South Dongding," its traditional "pack, roll, and roast" method made it popular in the '70s and '80s. Despite the prevalence of "Taiwanese High Mountain Tea" today, my fondness for the traditional Frozen Summit endures, cherishing its gentle and warming tea broth.
Surprisingly, a 7-year-old batch of Dongding Oolong revealed a delightful passion fruit aroma, showcasing the allure of "Old Frozen Summit," a treasured gem among Taiwanese tea enthusiasts.
Distinguished from "High Mountain Tea," classic Dongding Oolong is crafted through meticulous shaking, fermentation, and roasting, exuding a unique aroma of roasted rice and wood with a comforting mouthfeel.

Here's my brewing recommendation

Water temperature: Start with boiling water, then reduce to 90°C for subsequent infusions.

Tea-to-water ratio: Use 5g of tea for every 90ml of water.

Infusion times: Steep for 15 seconds initially, then increase to 20s, 30s, and finally 45s for subsequent infusions.
